Breaded Scallops

Recipe Ingredients

* 1 egg
* 1/3 cup of instant mashed potato flakes
* 1/3 cup of seasoned bread crumbs
* 1/4 teaspoon of salt
* 1/8 teaspoon of pepper
* 3/4 pound of scallops
* 2 tablespoons of butter
* 1 tablespoon of vegetable oil

Recipe Directions

1. Beat and whisk the egg in a bowl.
2. Add the instant potato flakes, bread crumbs, salt and pepper and mix in a separate bowl.
3. Dip the scallops in the beaten egg, and then roll them in the potato mixture.
4. Heat butter and oil over medium heat in a large skillet.
5. Add the scallops to the butter and oil and cook them for 4 to 5 minutes or until the scallops are opaque and coating has turned golden brown, turning once.
