How To Cook Barbecued Scallops

Barbecue Scallops are a delicious and fun way to prepare this tasty seafood. Here is a great recipe for barbecue scallops:

* 12 slices of Bacon with the rind removed
* 24 large Scallops, shelled and washed
* black pepper, season to taste
* 1 teaspoon of freshly chopped parsley
* 2 lemons, juiced
* 2 ounces of unsalted melted butter

Cooking Directions
1. Place the  lemon juice, melted butter, pepper and chopped parsley into a large mixing bowl and mix well.
2. Add the Scallops to the mixture and fold to coat evenly.
3. Take each slice of bacon and cut  rasher in half along the width, then wrap each scallop in a half bacon slice, threading each scallop onto a  skewer. Make sure to  reserve the remaining butter mixture.
4. Cook the scallops over hot coals for three to four minutes on each side. Use the remaining butter mixture to baste. Cook the scallops  until the bacon is  golden brown and crisp.
5. For serving, place the skewers on  a serving platter then drizzle any of the remaining butter mixture over the top of them.
6. Serve immediately.
